When we went out to an Italian restaurant for my husband’s birthday, I had a dish called an eggplant stack. I decided to use the basic idea to make a dish using up items in the fridge.
I hate throwing out food that has gone bad. I love figuring out ways to use stuff up!

I started with roasted eggplant slices. This eggplant came from the reduced section at the grocery store.
On top of each slice, I sprinkled mozzarella cheese. I bought packages of the cheese about 2 months ago when they were on sale. I had planned to make pizza but that didn’t happen.
The restaurant dish used spaghetti sauce which I didn’t have. Instead I used up the remaining dried tomatoes I made and froze last summer. I topped everything with medium salsa which has been in the fridge for several months.
Finally the restaurant dish was topped with arugula which I didn’t have. The chef also used goat cheese, not mozzarella.
