
1. Recycle plastic containers for chicken. Since I discovered Aldis used plastic containers for chicken pieces, I’ve been washing them and reusing them as plant bottoms for the plants I’m starting from seed or cuttings.
2. Use up bits of veggies in quiche. My sister-in-law mentioned making quiche and using up some peppers and onions in her quiche this week, and a lightbulb went on for me. Unfortunately, my pepper was too far gone and had to go in the compost bucket.
3. Homemade keto maple syrup. This was a bit of a bust. And, it was my fault. But…I’m glad I tried making it and I used it anyway in my chocolate protein bar recipe. I think the syrup separated because I used a monk fruit/erythritol combination instead of an allulose sweetener. I’m going to look for another recipe to see if I can make it successfully.
4. Homemade chocolate protein bars. Again, a bit of a bust, and also my fault. However, I did use 2/3 of a jar of Kirkland mixed nut butter that was about 4 years old. I also used coconut flour which was a bit older than that. Ahem. I used up a bag of Pascha chocolate chips though I messed up the melted chocolate for the top of the bars by adding monkfruit/erythritol instead of liquid Stevia. But…the bars aren’t horrible as long as you ignore my mistakes, and I plan to make them again, the right way.
5. Pay 2 medical bills in person. Over the summer, 2 of my children had their wisdom teeth removed. When I received the bills, I realized that I couldn’t pay online (my favorite) and I couldn’t put my HSA credit card information on the invoice. Since I’m doing PT about 2 minutes away from the oral surgeon’s office, I took myself there and paid the bills in person.
